Turkey Day and the Perfect Turkey

So when I got my first job out of college, the employer gave a holiday bonus voucher for a 40 lb. turkey. About the same time, a buddy and I cut some birch firewood. I then smoked a 40 lb. turkey for 72 hours. I suggest that no one use birch firewood to smoke anything because it will smell and taste like dung. The next year I used hickory and ALL was good.
